Enchilada's and Black Bean Salsa


We had Ed and Matthew's favorite dinner tonight - red sauce enchilada's and black bean salsa. The enchilada recipe is from my mom - the ones she made when I was little. And the black bean salsa recipe I got from my sister-in-law Beverly. Everyone loves the black bean salsa recipe - and it is really easy. Matthew ate 3 enchilada's tonight! I can even get Dallin to eat a little. And all 3 of the older boys will eat the black bean salsa!

FREEZING Soccer in the Spring

Soccer started up again this weekend. You would think that with it being Spring soccer and almost April that it would be nice weather. No such luck! It was FREEZING! The wind made it even worse. Dallin's game was at 9 but I think it was even colder and winder at Matthew's game at 10. Luckily, since Matthew is only 4, they didn't play for very long - it was too cold! But the boys still had fun and Dallin even scored 2 goals! Hopefully we will have better weather next weekend.

Best Chocolate Cake Ever!!!!!!!!


This is the best chocolate cake I have ever had (and I have had a lot)! I actually got the recipe back in college in a cookbook my good friend Suz gave me for my birthday one year. I started at the beginning of the book trying recipes and stopped once I made this one. It is to so yummy! Everyone that has tried it LOVES it! I hope you like it too!

It's a Girl Thing! (the nails not the ring)

So yesterday started with me getting thrown up on, then later the baby peed on me, and then when it was time for Dallin(6) to go to his first day of basketball (a skills class) he said he wants his dad to take him (that really should not have upset me but I signed him up, I remembered when it started, I got him ready to go, and I really needed out of the house - but I was happy he wanted his dad to go). Not really a horrible day - more of a typical day. But I needed a break. Luckily, my good friend had invited me to go get a pedicure with her and get our nails done. It was so nice to get out and not be grocery shopping. We just sat and chatted and got our pedicures while sitting in the massage chairs and then got our cool nails - I haven't had fake nails since I got married (almost 10 years ago). I love them! But they will take some getting use to. It is fun to feel like I have at least tried to look put together. I was so excited to go do a girly thing (I am not very girly which is good since I have 4 boys) that I had to take a picture (I don't know how to take a picture of fingernails). Anyway, it ended up being a great day! My friend even treated me to my favorite ice cream at Maggie Moos since I am starting South Beach today (I have a LOT of weight to loss from this baby). Easter Morning

Easter is so much fun with kids! The boys were so excited that the Easter Bunny found them and left them fun things - transformers, kites, bubbles, a little candy. It was a great Easter - these pictures are just the beginning of the day. There is more to come - when I get a chance. And the pictures from the rest of the day are at least a little better - Dallin won't clash so badly (he picked out his own pjs - orange shirt, green shorts - awesome).

I don't fold the napkins exactly like they say to. You have to play with it a little bit but they are cute. I have made them for the last 2 or 3 years and everyone always loves them.

Eggs, Eggs, and More Eggs - with a LOT More to Come

Filling Easter Eggs always takes a lot longer than you think. Luckily, Dallin helped me. I wasn't happy about him helping at first since he was suppose to be in bed. But it turns out, I really needed the company tonight. He is such a sweetie - it is hard to not smile with him around. Hopefully, he will help me fill 1000 more for our Easter Egg Hunt that is after Easter this year (to let the snow melt and my grass dry). These eggs are for Ed's family this Sunday.

The Tooth Fairy Owes Dallin Big Time

It was a rough day for my little guy. But he was tough and did great. First they gave him a shot, which he was not happy about. Then he pretty much passed out on my lap at which time the dentist carried him back. About 30 minutes later, after being put under, he was all done and starting to wake up. I wish I had my camera - he was so funny. But once we got home, it wasn't so funny. He started throwing up and crying. But, a few hours later, he was just fine. I am just glad this is over with! And what an awesome dentist (he is in our ward), he called to check on Dallin tonight!

Oh - I LOVE this Bottle!


Finally, after trying for a few weeks, Brecken drank 3 ounces from a bottle tonight!!!!!!!!!!!! That might not seem like a big deal but it really is. Up until tonight, it didn't matter what bottle, nipple, or even what was in the bottle (formula or the real stuff), Brecken would have NOTHING to do with it. Today, I took a different approach. I had 2 different bottles with 2 ounces of formula in each. I put Brecken on my legs so he was facing me and I put one of the bottles in his mouth and just let him "play" with it. If he started to get upset, I took it out and/or switched bottles. The first time he didnt' drink anything but he didn't really get too mad either. I did the same thing right before bed but this time he started to drink and he kept drinking. He finished all 2 ounces in the one bottle (the one in the picture) so I hurried and poured the other 2 ounces in it. Let's just say that this bottle is my new favorite bottle and I will be buying more of them tomorrow! This gives me hope that I will be able to go to my digital scrapbook weekend (yes I am switching - it is bitter/sweet) at the end of April!

What a GREAT Helper!

Dallin is always helping out - from entertaining Brecken, helping Matthew and Gavin with the wii or other games/toys, to making a fruit salad. He is such a sweetie!

Kids, kids, everywhere!

Sunday's are always a little crazy with church from 1-4 (I hate Church this late). But it was even more crazy/fun with our friend's 3 kids over for a couple of hours. They were having people over (15) from Jason's work so we had the kids come and play and eat with us. It was a fun evening - and crazy!

It was snowing when we went to bed last night and we woke-up to this! It isn't a ton of snow, we didn't have to shovel or anything. But still, it is March and Easter is in one week! And I am having all of Ed's family over for our annual Easter Egg Hunt and dinner. I hope it warms up. It does make me very happy that I am not having our annual friend Easter Egg Hunt until the Saturday AFTER Easter. Normally, I have it the Saturday before Easter (which would have been yesterday). Luckily I didn't - it was cold and my grass was wet and there was still snow. Hopefully, the sun will come out and my Easter Egg Hunts will be "dry" and snowless.
